Cool Cucumber Summer Salad

Summer is the time for fresh garden produce, and one of these staples in the cucumber! Cucumbers make great additions to many summer recipes, including sliced in salads (pasta salad, tabouli), sandwich topper or fillers (think wraps, pitas), dipped in hummus, made into pickles, or in gazpacho soup. Here are some fun facts about this summer garden treasure:

  • Cucumbers belong to the cucurbitaceae plant family, which also included melons, squash, and pumpkins.
  • Cucumbers are 96% water and come in many sizes, shapes, textures, and colors. Due to their high water content, cucumbers make excellent hydrators during the hot summer months.
  • Cucumbers contain caffeic acid, which along with the fruit's high water content, can help soothe puffy eyes (hence, why you see cucumber face masks).
  • Nutrition Stats: 1 cup raw sliced cucumber contains 12% of the recommended daily intake of vitamin K, 7% DV of vitamin C, and is about 16 calories. Cucumbers do not contain fat or sodium.
After my friend, and fellow RD, Courtney, gave me some of her extra cucumbers from her garden, I was inspired to create a cucumber salad recipe for our Independence Day cookout. This simple recipe was the result of my inspiration.


Cool Cucumber Summer Salad Recipe



Serves 4

Ingredients

2 English cucumbers peeled and sliced
1/2 C of light mayonnaise (I used olive oil mayo)
3 Tbsp on distilled white vinegar
2 Tbsp fresh lemon juice
1/2 of a sliced red onion
1-2 Tbsp of dill weed
Salt and pepper to taste

Directions

1. Begin by peeling and slicing the two cucumbers.

 2. Slice half a red onion and combine in a bowl with the sliced cucumbers.
 3. Add mayo, vinegar, lemon juice, dill weed, salt and pepper, and toss together. Chill for an hour and enjoy! This light, tangy, flavorful summer dish is a perfect addition to a dinner party, potluck, or summer cookout.
